Manon

who – Tim Webber and Monique Millton (owners/winemakers/farmers)

where – Forest Range, Adelaide Hills

vineyards – 5 hectares of Pinot Noir, Chardonnay, Savagnin, Pinot Gris, Sauvignon Blanc, Garganega, Cabernet Franc, Merlot and Cabernet Sauvignon planted on a 600 meter elevation ridge filled with quartz and mica, farmed biodynamically and without irrigation by Tim and Monique

winemaking – hand harvested grapes, no additions or subtractions at any time

labor practices – from Tim: Since we started the farm it’s been priority number one to see that the people working with us are paid good and well and of course in accordance with our Law. We are fortunate in Australia to have very fair pay for all workers, as well as clear set rules around Rights and superannuation entitlements. Not to mention free health care for all thanks to the work of successive Labour Governments back in the 80’s and 90’s.
As far as things happen on the farm - well we farm nearly 5 hectares of grapes, dry grown and low yielding. For that there is Mon and myself plus generally 3 to 4 permanent/part time staff.
We choose to work with locals to support our community and to help to continue the evolution and local knowledge of organic viticulture. We put a lot of effort into our relationships, training and conditions - ultimately staff here are also our family, and for felix too and so a close bond is important.

summer 2021 release

2019 PEACHES - CHARDONNAY, SAUVIGNON BLANC & PINOT GRIS - 12.4% ALC

The quality of the fruit led us to ferment in whole bunches and hand de-stem over a wooden frame we built many years ago. Each berry is popped off as a whole, creating a delicate carbonic fermentation inside. We believe this process captures the pure essence of the grape and its colour. This wine is a collective ferment of most of the white grapes we grow. Chardonnay, Pinot Gris & Sauvignon Blanc with a little dash of Savagnin. The texture is velvety and succulent like a peach - delicious! The cloudiness of the wine is due to no filtration, the wine having energy and life inside. Give the bottle a little movement (like a snow dome) and store upright - ideally in the fridge. Open and enjoy with some well grown and true organic food! Take the time to dance, smile, eat and enjoy this wine.
